Recently with a large abundance of left over lychee, I decided to make lychee jam.
Here's the recipe:
4 cups of lycheee, shelled and seeded
1.5 cups of sugar
freezer pectin
1. combine in a bowl mix and allow to sit for 15 minutes
2. add the pectin, place in jam jar then place in freezer
That's it!! Yup it's just that easy
My results were a very sweet jam, almost too sweet, I think longan might be better.
I enjoy the jam on toast or a peanut butter and lychee jam sandwich.
